Wine Down Wednesday at Council Oak, Seminole Hard Rock Tampa

Before I moved to Tampa, I had a standing girls night - every Wednesday night, my friends and I would either go out to eat together or cook dinner at one of our houses. Four years later, this tradition is one of the things I miss most from home. Upon moving here, my friends were replaced by my husband Gabe who wasn't always thrilled about going out for martini's or wine on Wednesday nights. Eventually Wednesday nights out came to a halt - until now.....
Seminole Hard Rock's Council Oak Lounge introduced Wine Down Wednesday a few weeks ago and I have a feeling this will become a weekly tradition for us. This isn't your typical house wine ladies night promotion either. There is a large selection of wines for $10 a glass that are generally only available by the bottle. Some of the wines found on the menu go for $80+ a bottle at Seminole Hard Rock. The wines offered include: Chalone Chardonnay, Chateau St Michelle Eroica Reisling, Duckhorn Sauvignon Blanc, Dynamite Cabernet, Casalvento Janus Cabernet, Flora Springs Trilogy, Chalone Syrah, Domaine Carneros Pinot Noir, Chateau Greysac Medoc, Wente Crane Ridge Merlot
Along with the $10 glasses of amazing wine, you will also find $10 plates. Yes you read this right - all Wine Down Wednesday menu items are only $10. Gabe and I decided to try out a few from the menu and a few glasses of wine. Since we were sitting in Council Oaks lounge, we also got to hear live music.
The first thing we ordered was the Charcuterie Board. I have a weakness for cheese and meats and am accustom to spending $20 on a board. For only $10, this was a no-brainer. The board included cheddar, smoked gouda, goat cheese, Spanish chorizo, Italian salami, Serrano ham and honeycomb.
The second item we ordered for an appetizer was Barbecue Oysters. This dish consisted of four oysters topped with Carolina barbecue sauce and Council Oak Bacon.
There were a few options for sandwiches, including the most amazing sliders I have ever tried. Not surprising, being Council Oak Lounge offers one of my top three favorite burgers in town. The miniature version of that glorious burger did not disappoint. A house mixture of aged beef, cheddar cheese and topped with caramelized onions.  Holy wow. I may have to order these every single Wednesday.
When we saw the Mini Cheese Steaks on the menu, each offering a different type of meat, we had to order them. This dish was not easy to photograph so not only is it a bit fuzzy, you are unable to see that this is three different mini-cheese steaks - Filet & Provolone, Rib Eye -Gruyere and NY Strip-Aged Cheddar.
On my second trip to Wine Down Wednesday with my friend Nicholas of Never Have I Ever Tampa, we duplicated much of mine and Gabe's night, subbing the cheese steaks for the Grilled NY Strip Flat Bread. The sliders were just as good - if not better this time around and still stand firm as my favorite item on the menu.

Other items on Seminole Hard Rock's Wine Down Wednesday menu are: Bruschetta, Council Oak Chips with Blue Cheese and Truffle Oil, Grilled NY Strip Flat Bread and Ybor City Crab Croquets. The Illusionists - Witness the Impossible™ at Straz Center Tampa

Last night, my husband Gabe and I saw The Illusionists - Witness the Impossible™ at Straz Center in Tampa. It was an incredible show which at times kept you at the edge of your seat or splitting your sides from laughing. A mix of comedy, magic tricks, death-defying stunts and acts of breathtaking wonder, The Illusionists dazzled an audiences of all ages last night. Both Gabe and I are huge fans of America's Got Talent and it was great seeing this in person, as we both saw them on TV a few years back.

The Illusionists - Witness the Impossible™ was an amazing show which has seven starts, each masters in their own field of magic. All night, we kept wondering "how did they do that?!". The stars included:

The Manipulator, Yu Ho-Jin. Considered a rising superstar in the world of magic, Ho-Jin was recently named the 2014 “Magician of the Year,” by Academy of Magical Arts and was the first Asian to win the Grand Prix at the Fédération Internationale des Sociétés Magiques, also known as the “Olympics of Magic.”. At the end of the night, Yu Ho-Jin paid special tribute to the Tampa Bay Lightning with a "Go Bolts" illusion.

The Anti-Conjuror, Dan Sperry. Described as Marilyn Manson meets David Copperfield, Sperry combines the art of magic with the macabre and is one of the top 10 most-Googled people, thanks to a legendary America’s Got Talent appearance. He was quirky, funny and scary all at the same time.

The Trickster, Jeff Hobson. Hobson is the epitome of glamour and showmanship. Don’t be fooled by his innocent appearance, he has audiences laughing long after the curtain goes down. Jeff played with the audience and even stole three watches from viewers without their knowledge - he did give them back at the end of the night.

The Escapologist, Andrew Basso. Italy’s star escape artist, Basso considers Houdini his hero and is fast becoming one of the world’s most popular illusionists. He is the only person in the world to perform Houdini’s famous Water Torture Cell with absolutely no covers. Andrew held his breath for over 3 minutes to perform Houdini's tower cell trick.

The Inventor, Kevin James. Known for innovative illusions, James is an inventor, comedian and collector of the strange and unusual. He is one of the most prolific inventors of magic in the world and has created some of the most celebrated illusions of the last century. Kevin made it snow in the audience at the end of the night.
The Warrior, Aaron Crow. A strong and silent type specializing in weapon magic, Crow has mastered some of the most dangerous acts without saying a single word. Belgium’s international magic sensation and a first place finisher at the World Championships of Magic, he uses swords, paintball guns and powerful crossbows to keep fans on the edge of their seat. Last night, we watched as he shot an apple off the head of an audience member. Her diamond wedding ring was inside of the apple and with a perfect shot, the ring was around the arrow on the target.

The Futurist, Adam Trent. Trent shatters stereotypes and brings a new generation of magic to fans fusing technology, illusions, dancing and comedy with classic techniques. Adam performed a few tricks through the night, including a light show that left you wondering.

Egg, Avocado and Black Bean Tostadas Recipe #EBeggsfit

I could honestly eat Eggsland's Best eggs for breakfast, lunch and dinner. Truth be told, I have even enjoyed them as a late night snack. They're only 60 calories per eggs and contains more nutrition than the ordinary egg. I've recently started making tostatada's and my favorite combination is a sunny side egg over avocado and black bean puree. It's the perfect combination and would work for anytime of the day.

Egg, Avocado and Black Bean Tostadas

Ingredients:
For Black Bean Puree
1 tablespoon Olive Oil
1 small chopped white onion
1 tablespoon chopped jalapeno pepper
1 tablespoon finely chopped cilantro
1/2 teaspoon ground cumin
1 can Cuban style black beans (I found mine at Trader Joe's)
1/2 cup beef broth

For Tostada 
4 tostada's (found in the ethnic aisle near tortillas)
1 avacado, sliced
4 sunny side up eggs
Cilantro for garnish
Hot sauce if wanted

Directions:
Heat Olive oil on medium until hot, add onion, jalapeno, cilantro and cumin. Cook for 5 minutes on medium. Add black beans and beef broth, cook for 20 minutes on medium low, stirring frequently. Blend the mixture (I used my BlendTec on Sauce mode) until you have the consistency of puree. 

Cook your eggs sunny side up. Slice your avocado. Stack the tostada with your bean puree, egg, then avacado., Top with cilantro garnish and hot sauce.

ASICS desk exercises for National Employee Health and Fitness Day

Did you know today is National Employee Health and Fitness Day? I started my morning out with an awful 3 mile run which I'd rather not discuss. Instead, I want to share ASICS info-graphic on how to stay active at work.
I have had a desk job my entire career. I now work from home and while one would think that makes life easier to stay active, it is quite the opposite. I sometimes find myself never getting up during the work day. These desk exercises will help you stay active while at work.

The average American sits 50%-70% of the day - that equals 93. hours a day, 46.5 hours per week. Mind boggling numbers that have really bad side affects. Those Mondays-Fridays desk sitters become part of the 80% of Americans that fall short of the recommended 2.5 hours of moderate activity per week
Too much sitting is associated with: 21% increased risk of lung cancer, 24% increased risk of colon cancer, 32% increased risk of endometrial cancer. Also if you aren't active, you will not burn as many calories.

Here are some easy steps to stay active during the workday.
MORNING: Prior to lunch, find a few minutes to do leg lifts, desk push-ups and reverse desk push-ups. If you are in a cubical, get a group together to keep each other accountable (and so you don't look silly).
LUNCH: During lunch time, do leg squats, cubical wall sits and chair dead lifts. 
AFTERNOON: Before you head home for the day, do spinal twists, climb the stairs and do shoulder shrugs. I love these reps as they not only help you stay fit but also act as a stress relief. 
DESK MOTIVATION: Have items around your desk that motivate you. I have my ASICS mini marathoner (aka Mini Megan) which was made for me during the 2014 NYC Marathon. Beside Mini Megan is my 2014 runDisney Vinylmation Dopey Mickey, who is a constant reminder that I ran 48.6 miles in 4 days.

2015 North Highland Worldwide Consulting Day of Giving Back

Saturday May 16, 2015 was North Highland Woldwide Consulting's 4th annual Day of Giving Back where 22 offices across the US and UK volunteered in their communities. We had over 1,500 volunteers come out, giving back to those less fortunate. Our Central Florida offices (Tampa, Orlando, Jacksonville) had a wonderful time making an impact in our communities.

North Highland Tampa - Metropolitan Ministries

The 2015 Day of Giving Back was the second year the North Highland Tampa Office volunteered at Metropolitan Ministries The organization’s mission is to “…care for the homeless and those at risk of becoming homeless in our community through services that alleviate suffering, promote dignity and instill self-sufficiency.” Services include food, lodging, childcare, and life skills.
We put on gloves, hair nets, and aprons in order to help serve hot meals to residents. Majority of the food is donated to Metropolitan Ministries by local restaurants and church groups. Saturday's lunch was Chicken Parmesan! We also helped “behind the scenes” by grilling hundreds of chicken breasts for the following night’s BBQ dinner. We sliced hundreds of pounds of lunch meat and assembled sandwiches to be sold at Metropolitan Ministries Inside the Box Cafe, where every meal sold gives a meal to someone in need.

North Highland Jacksonville - Five STAR Veterans Center

On Saturday morning, the North Highland Jacksonville office hosted a Professional Development Day at the Five STAR Veterans Center. Nearly 20 veterans participated in this four part event; sessions including Dress to Impress, Job Seeking Tips & Tricks, Online Presence and Resume 1on1.
Throughout the morning, the Veterans broke out into small groups and rotated through the four 30 minute sessions, facilitated by North Highland. Following the sessions, everyone reconvened to wrap things up and enjoy some BBQ with the Vets! Our day volunteering at Five STAR Veterans Center brought invaluable support and guidance to Jacksonville's local veterans. Please check out www.dayofgivingback.com for more information.

North Highland Orlando - Clean The World

The North Highland Orlando office spent their Saturday morning at Clean The World, an organization with a two part mission; 1) recycle hygiene products from resorts and hotels to eliminate waste 2) by distribution of hygiene kits to impoverished people throughout the world, prevent millions of hygiene-related deaths each year. Alongside other groups of volunteers we sorted through 90,000 bottles of shampoo, conditioner, body wash and lotion and 27,000 bars of soap.
The Orlando office is excited to have impacted not only the local Orlando community we live in but also global communities throughout the world with the hygiene kits that will be created with these items. The 2015 Day of Giving Back was a great opportunity to further a great organization’s mission and come together as an office to make the world a better place.

North Highland Central Florida also took part in a global food drive, hosted by each local North Highland office. We are still tallying up the total pounds contributed throughout our 22 offices and will update this post with the numbers, which I know will be in the thousands.

When I think of summer, a few things stick out - the beach, grilling out and eating S'mores. You will rarely find me at a campfire so I have found ways to enjoy this ooey gooey treat in the comfort of my home.
Over the past few years, I have seen countless S'mores mug cakes floating around on pinterest and I decided to give this a try. While this recipe is not intended for someone who is dieting, it is downright delicious.
This was such an easy recipe to make. It is made in the microwave and you have a delicious S'mores cake in your hand in 10 minutes or less. Simple, quick and delicious.
Makes 1 serving
3 tablespoons graham cracker crumbs (I used Nabisco Honey Maid Graham Cracker Squares)
3 1/2 tablespoons unsalted butter, melted
2 tablespoons sugar
1 large egg
1/2 teaspoon vanilla extract
1/4 cup pastry flour (if you cannot find pastry flour, click here for substitution)
2 tablespoons unsweetened cocoa powder (mine was dark cocoa, hence the dark color)
1/8 teaspoon Hershey's baking powder
pinch of salt
3/4 bar of Hershey's milk chocolate
3 Kraft S'moresMallows

In a small bowl, combine 3 tablespoons butter and chocolate. Melt in the microwave for 20-30 seconds. In another bowl, combine 1/2 tablespoon butter with 3 tablespoons of graham cracker crumbs, stir until combined. Press crumb mixture into the bottom of your mug. In a medium sized bowl, whisk egg, sugar and vanilla until smooth. Add flour, baking powder, salt and cocoa, and stri with a rubber spatula until you have a smooth batter. Add the butter / chocolate mixture and combine.

Top the graham mixture with half of the chocolate batter, top that with 1 Kraft S'moresMallow. Top with the remaining batter, then your second S'moresMallow. I used a glass mason jar and it was half full. The marshmallow's expand, so be sure not to have this filled to the top. Microwave for 1:30. Top with the third marshmallow and toast it with a kitchen torch.


I found all of the ingredients used to make the S'mores at Walmart in Tampa. There was a S'mores display with the S'moresMallows, Graham Cracker Squares and Hershey Bars in the middle of the store. .

Jord Wood Watches for a unique Fathers Day gift #jordwatch

I cannot believe Fathers Day is right around the corner. This also means my birthday is coming up! I was born on Fathers Day and always joked that I was my Dad's eternal fathers day present. There is a trend going around - buying gifts made from wood. Wood sunglasses, Wood bow-ties and Wood watches are a few items I've seen popping up everywhere I look. Being my maiden name is Wood, I love everything about this trend ;)
I gave my husband Gabe a Jord Wood Watch for his birthday last month. When we were with the family at Epcot over the weekend, his father mentioned a few times that his watch would make a perfect Fathers Day gift.

HYATT REGENCY ORLANDO KICKS OFF SUMMER WITH MEMORIAL DAY WEEKEND
Hyatt Regency Orlando unveils Summer Sensation, a live outdoor concert featuring country star Josh Thompson with special guest JT Hodges on Sunday, May 24. The hotel’s Garden Terrace will act as the backdrop for the event with cocktails and bites available for purchase during the performance.
