Lightened up BBQ Chicken Salad with Cilantro Jalapeno Lime Vinaigrette #SaveALotInsiders

I love eating salads for lunch. One of my favorite salads is a BBQ Chicken Salad but they are high in calories. I made a version at home using boneless skinless chicken breast, avacados and homemade vinaigrette. You can make the chicken ahead of time and use this for meal prep. I actually had some leftover roasted corn to add to this and forgot to include it - oops!

I picked up all the ingredients for this salad at Save a Lot. I was impressed to find so many brand named items at low prices.  Where else could you find a pound of Tyson all natural boneless skinless chicken for less than $3 (prices may vary by location)? The total cost for this salad was under $8 and we got 4 servings out of it.
Since I am watching what I eat, Ranch is on my no no list. Instead of using the provided Chipotle Ranch in the Dole all natural chopped salad kit, I made homemade cilantro jalapeno lime vinaigrette. This took less than a minute in my BlendTec blender.
BBQ Chicken Salad Ingredients (four servings)
Dole All Natural Chopped Salad Kit with Kale
1 lb bonesless skinless chicken
4 tablespoons BBQ sauce of your choice
1 Avocado diced
Corn (not in the photo)

Salad Instructions
Preheat oven to 400. Place chicken in an 8x8 pan and cover with BBQ sace. Bake for 20 minutes. Shred the chicken using two forks. This can be done in advance to save time during the work week.
Dice the avocado
Layer the lettuce from the salad kit, topping with the avocado, corn then chicken. You can use the provided tortilla chips and cheese if wanted.

Cilantro Jalapeno Lime Vinaigrette Ingredients
4 tablespoons lime juice
2 garlic cloves
4 tablespoons Extra Virgin Olive Oil
1 teaspoon salt
1 teaspoon agave nectar
2 tablespoons fresh cilantro
2 slices (or more to taste) jalapeno pepper

Vinaigrette Instructions
Combine all ingredients into a blender. I used the dressing feature on the blendtec.
