Chicken and Bacon Cheddar Waffles for Music Inspired #SundaySupper

Does a song ever remind you of food? That is the theme of this weeks #SundaySupper. After taking a few months off from the group, I was excited to join back with this theme. I have quite a few songs stuck in my head after reading the lineup of recipes the group has pulled together this week!

I knew instantly what I wanted to make and for this music inspired #SundaySupper. It wasn't a song that inspired me, instead it was the "Empress of Soul", Glady's Knight. One of my favorite tourist restaurants in Atlanta is Gladys Knights Chicken and Waffles. This weeks theme inspired me to make this dish at home.
 Now, these are not your ordinary Chicken and Waffles. I decided to make Bacon and Cheddar waffles with buttermilk fried chicken tenders. Although I love Chicken and Waffles, I do not like eating fried chicken with a bone. It is too much work trying to get the perfect bite.
Overall, these turned out INCREDIBLE. I will be making this recipe again!!

For the Chicken:
Ingredients:
2 cups buttermilk (I make my own - it's super easy, 1 cup of milk to 1 tablespoon of white vinegar, combine, mix well and let sit for 5 minutes)
3 cups self rising flour
House seasoning to season your flour - I use a combo of cayanne pepper, garlic powder, salt, pepper, paprika, Cavenders Greek seasoning
Peanut or Canola oil to fry
Directions:
Let chicken tenders soak in buttermilk for at least 30 minutes (the longer you soak, the better they will be). Remove chicken from buttermilk, dredge in the seasoned flour, place back into the buttermilk and dredge back into the flour one more time.

Fry the tenders in preheated oil at 350 degrees. I like to use a large cast iron skillet when frying. The tenders should take 5-7 minutes.

For the Waffles:
Ingredients:
2 eggs, well beaten
1 cup (8 oz) milk
3 tablespoons vegetable oil
1½ cups self rising flour
2 teaspoons sugar
½ teaspoon salt
1 cup (4 oz) Sharp Cheddar Cheese, shredded
8 pieces crumbled cooked bacon (I cooked mine in the mircrowave so it would crumble easily)
Directions:
Preheat your waffle iron. Whisk the eggs, milk, and oil in a large bowl. Stir in your dry ingredients until smooth. Add the shredded cheese and crumbled bacon. Once your waffle iron is hot, pour in enough batter to fill.  Cook according to your iron’s instructions.

  11. These look INCREDIBLE! I love chicken and waffles and the savory waffle just makes it that much better! There's a chicken and waffle restaurant near me that I've been meaning to stop by and they do the bacon and cheddar waffle too.

  15. No need to use bone-in pieces. My friend who owns his own restaurant has a chicken and waffles dish that he serves on his Sunday brunch menu: Boneless skinless chicken breasts served in a waffle cone. Yours looks delicious too!

  20. Omg Megan...your Chicken and Waffles are beautiful! Look at that perfect golden fried batter on the chicken tenders...wow. And cheddar/bacon waffles...dude. I'm impressed.
    Even though I'm the opposite of you and prefer bone-in/skin-on chicken for it's flavor/moistness, I do agree that it can be a pain in the ass too...both preparation and eating. Yours truly look like they are from an awesome restaurant. Nice work. Please invite me next time.

  21. Awwwwww yeah! Chicken 'n waffles is one of the best things to eat in the whole world and I love your bacon cheddar twist on the waffles. That sounds incredible! I always make my own buttermilk too - it works the same and that way I don't buy a carton of buttermilk that I end up pouring down the drain. I.love.this.so.much!
