Thai Peanut Crunch Fish using Virgin Coconut Oil
1.5 ounces of white fish (I used Flounder)
Thai Peanut Coating (or any other coating of your preference)
Flour for dredging
1 egg for dredging
This is a super simple recipe. I picked up a package of Thai Peanut coating from Whole Foods but you can use whatever coating you prefer. Take your fish filet, dredge in whole wheat flour, then give it a quick egg bath and coat with the peanut mixture. Put your Virgin Coconut Oil in a pan, heat on medium and place your coated fish filet. I cooked it about 4 minutes on one side, 3 on the other. It was cooked perfectly and did not overwhelm you with coconut, which is what I was afraid of going into this. I served this fish along with a Asian slaw salad and Pad Thai noodles. Simply amazing.
